Banana Fritters (Island Style)

Ingredients

  • 2 large ripe bananas, mashed
  • 3 tbsp. flour
  • 1/2 tsp. baking powder
  • 4 tbsp. sugar
  • dash cinnamon
  • 1 egg, beaten
  • vegetable oil for frying

Instructions

  1. In bowl, combine bananas, flour, baking powder, 2 tbsp. sugar, cinnamon, and egg. Stir well.

  2. Pour 1/2 inch of oil in large frying pan.  Heat to medium heat for about 4 minutes.

  3. Drop spoonfuls of dough into oil and fry for 2-3 minutes, flipping sides. (Be careful-- oil is extremely hot!)

  4. Remove fritters and drain grease on paper towels.  Sprinkle with remaining sugar.
